Ingredients
  

For the Marinade

  • 3 tablespoons fresh lemon juice
  • 1 piece Zest of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced Essential for flavor
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes Optional for added heat

For the Skewers

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch chunks
  • Vegetables for skewering (optional): bell peppers, red onion, cherry tomatoes Chop into similar-sized chunks

Instructions
 

Preparation

  • In a large bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, chopped herbs, salt, pepper, and red pepper flakes if using.
  • Trim any fat from the chicken and cut it into 1-inch pieces.
  • Toss the chicken pieces in the marinade, covering them well. Cover the bowl and refrigerate for at least 15 minutes, or up to 1 hour.
  • If using wooden skewers, soak them in water for 20 minutes.
  • Chop any vegetables into similar-sized chunks.
  • Alternate threading the chicken pieces and vegetables onto the skewers.

Cooking

  • Preheat your grill or grill pan to medium-high heat.
  • Cook the skewers for 5-6 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
  • Let the skewers rest for 5 minutes before serving.

Notes

These skewers are perfect for family-style dining. Pair them with a side of grilled vegetables or a fresh salad. Yogurt or tzatziki sauce can make a fantastic dip.
