Leftover Pork Tenderloin Sandwich

Ingredients
  

  • 2 hamburger buns sliced
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup red onion thinly sliced
  • 8 ounces leftover pork tenderloin thinly sliced
  • 1/4 cup shredded lettuce
  • 2 tablespoons fresh parsley chopped
  • salt and pepper to taste

Instructions
 

  • Set oven to broil at 400°F (200°C). Toast the hamburger buns for 2–3 minutes until golden.
  • Spread 1 tablespoon of mayonnaise and 1 tablespoon of Dijon mustard on each half of the toasted buns.
  • Layer red onion slices on the bottom half of each bun. Top with 4 ounces of thinly sliced leftover pork per sandwich.
  • Add 2 tablespoons of shredded lettuce and 1 tablespoon of chopped fresh parsley per sandwich. Season with salt and pepper to taste.
  • Place the top bun over the fillings and serve immediately.

Notes

This one’s a fast fix for busy nights or next-day lunches. Toast the buns in advance and keep the pork sliced and ready to go. Reheat pork gently if needed to avoid drying it out.
