  • 2 large sweet potatoes, cubed Pre-cut sweet potatoes can save time.
  • 1 large red onion, cut in wedges

Seasonings and Oil

  • 1 tbsp olive oil Can substitute with other oils if desired.
  • 1 tsp paprika
  • 1 tsp garlic powder Essential for flavor.
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper.
  • Toss the cubed chicken, sweet potatoes, and red onion with olive oil and all the seasonings in a large bowl until evenly coated.
  • Spread everything out in a single layer on the prepared pan.

Cooking

  • Roast in the oven for 25 to 30 minutes, stirring halfway through for even cooking.
  • Check that the chicken is cooked through, reaching an internal temperature of 165°F (75°C), and the sweet potatoes are tender.

Serving

  • Once cooled slightly, divide everything into meal prep containers or serve immediately.

Notes

Feel free to add herbs, lemon, or yogurt as toppings for added flavor.
