Lazy Man’s Peach Cobbler

Ingredients
  

  • ½ cup unsalted butter 1 stick
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar for batter
  • ¼ cup granulated sugar for topping
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¾ cup milk whole or 2%
  • 1 can (29 oz) peach slices in syrup do not drain
  • ½ teaspoon ground cinnamon optional but recommended

Instructions
 

  • Preheat oven to 375°F (190°C). Place butter in a 9x13-inch baking dish and let it melt in the oven while it heats.
  • In a bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.
  • Add milk and stir just until combined. The batter will be lumpy—don’t overmix.
  • Once the butter is melted, remove the dish from the oven and pour the batter evenly over the melted butter. Do not stir.
  • Spoon the entire can of peaches with syrup evenly over the batter. Again, do not stir.
  • Sprinkle remaining ¼ cup sugar and cinnamon over the top.
  • Bake for 40–45 minutes or until the top is golden brown and bubbly.
  • Let cool slightly before serving. Best enjoyed warm with vanilla ice cream.

Notes

Store covered at room temperature for up to 1 day, refrigerated for 3 days, or frozen for 1 month. Reheat in oven or microwave. For variations, swap peaches with other canned fruits like cherry pie filling or blueberries. Make it vegan by using plant-based milk and butter.
