Ingredients
  

For the Skewers

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp jerk seasoning

  • 1 red bell pepper, cut in chunks
  • 1 red onion, cut in chunks
  • 6 pieces Wooden skewers, soaked Soaking prevents burning on the grill.

Instructions
 

Preparation

  • Heat the grill to medium-high heat for optimal char marks.
  • In a mixing bowl, toss the shrimp with olive oil, lime juice, jerk seasoning, and honey, ensuring they're evenly coated.
  • Thread shrimp onto the soaked wooden skewers, alternating with chunks of red bell pepper and onion.

Cooking

  • Grill the skewers for 2 to 3 minutes per side until the shrimp turn pink and are lightly charred.
  • Remove from the grill and let rest for 2 minutes to redistribute the juices.

Serving

  • Serve the skewers on a platter with extra lime wedges on the side.

Notes

These skewers can be customized with chicken or veggies. Leftovers can be stored in aluminum foil or an airtight container for 2-3 days. Reheat in the oven to maintain texture.
