  • 8 large tortillas
  • 8 pieces eggs
  • 1/4 cup milk Helps make eggs fluffy.
  • 1 cup cooked breakfast sausage or bacon Can be swapped for diced veggies for a vegetarian option.
  • 1 cup shredded cheddar cheese
  • 1 cup frozen hash browns, cooked
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • In a bowl, whisk together the eggs, milk, salt, and pepper. Cook in a skillet over medium heat until just set, stirring until smooth.
  • Warm the tortillas in a damp paper towel in the microwave for a few seconds or heat them one by one in a skillet.
  • Divide the scrambled eggs, breakfast sausage or bacon, cooked hash browns, and cheddar cheese evenly among the tortillas.
  • Roll each tortilla tightly, tucking in the edges to secure the filling.
  • Allow the burritos to cool completely on a wire rack or plate.

Storage and Reheating

  • Wrap each burrito in foil or plastic wrap and place in a freezer-safe bag or container.
  • To reheat, bake in a preheated oven at 375°F (190°C) for 20-25 minutes or microwave until heated through.

Notes

Get creative by pairing burritos with salsa, hot sauce, or serving with avocado slices or sour cream. These burritos can last in the freezer for up to three months.
