  • 4 pieces boneless skinless chicken thighs Can substitute with chicken breasts or drumsticks.
  • 1 piece red bell pepper, sliced
  • 1 piece zucchini, sliced
  • 1 cup snap peas
  • 1/3 cup sweet chili sauce The key flavoring sauce.
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder Essential for enhancing flavor.
  • Salt and black pepper, to taste
  • Cooked rice for serving Jasmine or basmati rice recommended.

Preparation

  • Preheat your grill to medium or your oven to 425°F.
  • Cut four large sheets of foil and lay them out flat.
  • Divide the chicken and vegetables among the foil sheets.
  • In a small bowl, whisk together sweet chili sauce, soy sauce, sesame oil, garlic powder, salt, and pepper until smooth.
  • Spoon the sauce evenly over each packet of chicken and vegetables.
  • Fold the foil to seal tightly, ensuring no steam can escape.

Cooking

  • Cook the packets for about 20 to 25 minutes, until the chicken is fully cooked and the vegetables are tender.
  • Carefully open the packets to release steam and serve over a bed of rice.
