  • 2 cups cooked shredded chicken You can use store-bought rotisserie chicken.
  • 1 can cream of chicken soup Can be substituted with homemade or other cream soups.
  • 2 cups frozen mixed vegetables Any frozen vegetables can be used.
  • 2 cups cooked rice Can be leftover rice.
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheese types.
  • 1 tsp garlic powder Don't skip this ingredient for flavor.
  • Salt and pepper to taste Adjust according to preference.

Preparation

  • Preheat oven to 375°F.
  • In a large bowl, mix together the cooked shredded chicken, cream of chicken soup, frozen mixed vegetables, cooked rice, garlic powder, salt, and pepper until well combined.
  • Spread the mixture evenly into a greased casserole dish, making sure everything is in a nice, even layer.
  • Top the mixture generously with shredded cheddar cheese.

Baking

  • Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown on top.
  • Let cool slightly before serving.

Notes

Serve family-style with fresh salad or crusty bread. Add a dollop of sour cream or fresh herbs if desired. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
