Ingredients
  

Egg Salad Mixture

  • 6 pieces hard-boiled eggs, chopped
  • 1 ripe avocado ripe avocado
  • 1 tbsp Greek yogurt Adds creaminess without many calories
  • 1 tsp lemon juice
  • 1 tbsp chopped chives
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Wraps

  • 4 large tortillas or lavash sheets Use any available tortillas or wraps
  • to taste baby spinach For added greens

Instructions
 

Preparation

  • Mash the avocado in a mixing bowl along with the Greek yogurt, lemon juice, salt, and black pepper until smooth and creamy.
  • Gently fold in the chopped hard-boiled eggs and chives until well combined, keeping some egg chunks for texture.

Assembly

  • Spread a generous layer of the egg and avocado mixture onto each tortilla or lavash sheet.
  • Layer a handful of baby spinach on top of the mixture.
  • Carefully roll up each tortilla tightly from one end to the other.
  • Slice the rolls into pinwheel-style pieces or leave them whole for lunch wraps. Refrigerate until ready to serve.

Notes

These roll-ups can be made in bulk and store well in the refrigerator for 2-3 days. Best enjoyed fresh.
