  • 2 cups hot water Just off the boil to dissolve the gelatin fully.
  • 2 cups cold water Chilled, to cool the mixture down.
  • 1 packet flavored sugar-free drink mix Choose a flavor you love for color and taste.
  • 1 tablespoon lemon juice Optional, for added brightness.
  • 1 teaspoon vanilla extract Optional, enhances flavor if the drink mix is mild.

Preparation

  • In a bowl, dissolve the gelatin in hot water. Stir until fully dissolved.
  • Add cold water and the flavored sugar-free drink mix to the mixture and stir until combined.
  • Whisk or stir briskly for thirty seconds to ensure the surface is glossy and free of bubbles.
  • Pour the mixture into a mold or dish and refrigerate until set, about 4 hours.

Serving

  • Once set, enjoy your keto-friendly jello by cutting into cubes.
  • Serve slightly chilled for the best texture.

Notes

Store in an airtight container in the refrigerator for 3-5 days. Jello does not reheat and is best served cold.
