  • 1 cup marinara sauce Warm before using.
  • 1 cup shredded mozzarella cheese Fresh mozzarella is recommended for better melting.
  • 1/2 cup grated Parmesan cheese Use fresh for a better flavor.
  • 1/2 cup almond flour or crushed pork rinds Both options are low carb; choose based on preference.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust according to preference.
  • as needed Olive oil for cooking Use a good quality for best flavor.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning, patting the seasoning into the meat.
  • Dredge the chicken in almond flour or crushed pork rinds, pressing gently to ensure the coating adheres.

Cooking

  • Heat olive oil in a skillet over medium-high heat and brown the chicken for 2 to 3 minutes on each side until golden.
  • Transfer the chicken to a baking dish and spread warm marinara sauce over each piece.
  • Top each breast with mozzarella and Parmesan cheese.
  • Bake for 20 to 25 minutes until the cheese is bubbly and golden, and chicken reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest for a few minutes before serving to retain juices.

Notes

Serve hot, optionally garnished with fresh basil or parsley. Leftovers can be turned into sandwiches or stored for later.
