Ingredients
  

For the Turkey

  • 2 to 3 pounds boneless, skin-on turkey breast Use fresh, high-quality turkey breast for the best results.
  • 4 tablespoons unsalted butter, softened Make sure the butter is at room temperature for easy mixing.
  • 1 tablespoon fresh rosemary, chopped Fresh herbs will give the best flavor.
  • 1 tablespoon fresh thyme, chopped Feel free to substitute with other herbs if desired.
  • 1 tablespoon fresh sage, chopped Use fresh for maximum flavor.
  • 3 cloves garlic, minced Add more garlic if you love its flavor.
  • 1 zest of 1 lemon Adds brightness to the dish.
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika Optional for a hint of spice.
  • ½ cup white wine or chicken broth Optional, for added moisture and flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  • In a mixing bowl, combine softened unsalted butter, minced garlic, chopped rosemary, thyme, sage, lemon zest, salt, black pepper, and smoked paprika if using. Mix well until everything is evenly blended.
  • Carefully loosen the turkey skin by sliding your fingers or a small knife between the skin and the meat, creating pockets without tearing.
  • Spread about two-thirds of the herb butter mixture under the skin, massaging it evenly over the breast. Use the remaining butter to coat the outside of the skin. Drizzle olive oil over the top.

Cooking

  • Place the turkey breast skin-side up on the rack in your roasting pan. Pour the white wine or chicken broth into the pan if using.
  • Roast the turkey for 1 to 1¼ hours, or until the internal temperature reaches 160°F (71°C). Start checking around 50 minutes. The skin should be golden brown and crisp.
  • Remove the turkey from the oven, tent loosely with foil, and let it rest for 15 minutes to allow juices to redistribute.
  • Slice the turkey breast against the grain into thick slices. Spoon pan juices over the top or make a quick pan sauce with the drippings and a splash of broth.

Notes

Leftover turkey can be stored in an airtight container in the refrigerator for up to four days. Reheat gently in the oven wrapped in foil with a splash of broth to keep it moist.
