  • 1 pound Italian sausage (mild or spicy — your choice) Choose according to taste preference.
  • 1 medium onion, diced Provides a flavorful base.
  • 3 cloves garlic, minced Enhances the aroma.
  • 2 medium carrots, chopped Adds sweetness.
  • 2 stalks celery, chopped Adds depth of flavor.
  • 1 medium bell pepper, diced Any color of your choice.
  • 6 cups chicken or vegetable broth For a hearty base.
  • 1 can (14.5 oz) diced tomatoes with juice Adds richness.
  • 1 tablespoon Italian seasoning Adjust to taste.
  • 2 cups short pasta (like penne or ditalini) Holds up well in soup.
  • to taste Salt and pepper For seasoning.
  • 2 cups fresh spinach or kale, roughly chopped Adds color and nutrition.
  • as needed Grated Parmesan cheese for serving Adds richness to the soup.

Instructions
 

Preparation

  • In a large pot over medium heat, add the Italian sausage. Break it up with a wooden spoon and cook until browned.
  • Add the diced onion, garlic, carrots, celery, and bell pepper to the pot. Stir occasionally and cook for about 5 minutes until softened.
  • Pour in the chicken or vegetable broth along with the can of diced tomatoes and their juice. Stir well to combine.
  • Sprinkle in the Italian seasoning, salt, and pepper, then stir to combine all flavors.
  • Bring the soup to a gentle boil, then add the pasta. Reduce heat to a simmer and cook until the pasta is tender, about 8 to 10 minutes.
  • When the pasta is done, add the chopped spinach or kale and stir just until the greens wilt.
  • Taste and adjust seasoning as needed. Serve warm with grated Parmesan cheese on top.

Notes

For storage, let the soup cool completely before transferring it to airtight containers. It can be stored in the refrigerator for up to three days. Reheat gently on the stove, adding broth if it thickens too much.
