Ingredients
  

For the rhubarb topping

  • 1.25 cups 1.25 cups rhubarb, sliced into 1/2-inch thick pieces Choose firm, vibrant stalks for best results.
  • 3/4 cup 3/4 cup brown sugar

For the muffin batter

  • 1/4 cup 1/4 cup butter, unsalted Recommended brand: Kerrygold.
  • 1/3 cup 1/3 cup butter, melted and cooled to room temperature
  • 1/3 cup 1/3 cup sugar
  • 1 piece 1 egg
  • 1.75 cups 1.75 cups flour, all-purpose Recommended brand: King Arthur.
  • 2 tsp 2 tsp baking powder
  • 1/2 tsp 1/2 tsp salt
  • 1/2 tsp 1/2 tsp nutmeg, freshly grated Enhances aroma and flavor.
  • 1/2 cup 1/2 cup milk
  • 1/2 tsp 1/2 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a muffin tin.
  • In a bowl, combine sliced rhubarb with 3/4 cup of brown sugar and stir. Let sit while preparing the muffin batter.
  • In a separate bowl, whisk together melted butter, sugar, egg, milk, and vanilla extract until smooth.
  • In another bowl, mix the flour, baking powder, salt, and nutmeg. Gradually combine dry ingredients with wet mixture, stirring until just combined.

Assembly and Baking

  • Distribute the rhubarb mixture evenly into the muffin cups.
  • Spoon the batter over the rhubarb until each cup is about three-quarters full.
  • Bake for 20-25 minutes, until golden brown and a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 5 minutes, then invert the muffin tin onto a plate to reveal the caramelized rhubarb.

Serving

  • Serve warm or at room temperature, optionally topped with whipped cream or vanilla ice cream.

Notes

Store muffins in an airtight container at room temperature for 2-3 days, or freeze wrapped individually for later enjoyment. They can also be toasted for a pleasant crunch.
