Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time and stir in the vanilla extract.
  • In another bowl, combine the all-purpose flour, baking soda, and salt, then gradually stir this dry mixture into the creamed mixture until just blended.
  • Mix in the rolled oats and chocolate chips until evenly distributed.
  • Drop large spoonfuls of the cookie dough onto ungreased baking sheets, leaving space between each scoop.
  • Bake in the preheated oven for 10 to 12 minutes or until the edges are golden.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Serve warm with vanilla ice cream or top with whipped cream for an extra treat. Store in an airtight container in the fridge for up to a week.
