Preparation

  • Wash the potatoes and cut them into halves or quarters for even cooking.
  • Boil the potatoes in salted water until they are tender, then drain and let them cool slightly.
  • In a large bowl, whisk together the olive oil, apple cider vinegar, and Dijon mustard until it’s a smooth blend.

Assembly

  • Add the warm potatoes to the dressing and toss to coat.
  • Mix in the chopped parsley and green onions.
  • Season with salt and pepper to taste.
  • Serve warm or at room temperature.

Notes
