Ingredients
  

For the Marinade

  • 1/2 cup honey Adjust sweetness to taste
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes Adjust to taste
  • Salt to taste Salt
  • Pepper to taste Pepper

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish Fresh parsley, chopped
  • 1 piece lemon, sliced For serving

Instructions
 

Preparation

  • In a medium bowl, mix together the honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk until well blended.
  • Taste and adjust seasoning to your preference.

Marinating

  • Place the chicken breasts in a resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Cooking

  • Preheat your oven to 400°F (200°C).
  • Remove the chicken from the marinade, discarding any leftover marinade.
  • Place the chicken in a baking dish.
  • In a separate bowl, mix crumbled feta with olive oil, salt, and pepper, then spoon this mixture over the chicken.
  • Bake for 25 to 30 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
  • Let it rest for 5 minutes before serving with greens or roasted vegetables. Garnish with fresh parsley and lemon wedges.

Notes

Store leftover chicken in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in an air fryer or oven at 350°F (175°C) for a few minutes.
