Ingredients
  

Vegetables

  • 1 pound fresh carrots Look for firm and brightly colored carrots. Can use whole or pre-cut baby carrots.
  • 1 pound fresh green beans Choose vibrant green beans that snap easily; avoid wilted beans.

Honey Glaze

  • 3 tablespoons olive oil Extra virgin olive oil is preferred but can substitute with avocado oil.
  • 3 tablespoons honey Choose quality honey for the best flavor.
  • 2 tablespoons balsamic vinegar Adds acidity to balance sweetness.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 teaspoon dried thyme Fresh thyme can be used for better flavor.
  • to taste salt and freshly ground black pepper Essential for enhancing flavors.
  • optional garnishes (chopped parsley or toasted sesame seeds) For added flavor and presentation.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and snap off the stem ends of the green beans. If using whole carrots, peel them and cut into 1-inch thick diagonal pieces.
  • If using baby carrots, keep them whole or halve them if thick.

Make the Glaze

  • In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, thyme, salt, and pepper until well combined.
  • Adjust seasoning to taste.

Coat the Vegetables

  • In a large bowl, combine the carrots and green beans. Pour the honey glaze over the vegetables and toss until evenly coated.

Roast the Vegetables

  • Spread the vegetables on a large baking sheet in a single layer, avoiding overcrowding.
  • Roast in the preheated oven for about 20-25 minutes, checking for tenderness around the 20-minute mark.

Finish and Serve

  • Optional: Broil vegetables for 1-2 minutes for caramelization, watching closely to prevent burning.
  • Remove from the oven, let rest for a couple of minutes, and garnish if desired. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for a few days. Reheat in the microwave or a skillet, adding a drizzle of honey and lemon juice if desired.
