  • ½ cup unsalted butter, melted
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar (for topping)

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease or line an 8x8-inch baking pan with parchment paper.

Mixing

  • In a mixing bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, honey, and vanilla extract, whisking until fully combined.
  • Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined.

Baking

  • Pour the batter into the prepared pan, spreading it evenly.
  • In a small bowl, mix the granulated sugar and remaining ½ teaspoon of cinnamon. Sprinkle this over the top of the batter.
  • Bake for about 22-25 minutes or until a toothpick inserted in the center comes out clean.

Cooling

  • Let the blondies cool completely in the pan before cutting them into squares.

Notes

For a fun twist, serve the blondies warm with a scoop of vanilla ice cream or pair them with coffee or tea. To store leftovers, keep in an airtight container on the counter for a couple of days or in the fridge for up to a week. Microwave briefly to warm up leftovers.
