Main Ingredients

  • 1 lb Chicken (breasts or thighs) Boneless is preferred for easy shredding
  • 6-8 oz Egg Noodles Thick and curly are best for texture
  • 2 medium Carrots Chopped for flavor and crunch
  • 2 stalks Celery Diced for added freshness
  • 1 small Yellow Onion Gives depth of flavor
  • 2 cloves Garlic Chopped or minced for fragrance
  • 4 cups Chicken Broth Low-sodium is a great option
  • 1 Bay Leaf For deeper flavor
  • to taste Fresh Parsley For garnish

  • to taste Salt and Pepper Adjust while cooking
  • a splash Lemon Juice Enhances the flavor

Instructions
 

Preparation

  • In a large pot, sauté the onions, carrots, and celery with a little oil until they are soft and fragrant.
  • Add garlic and cook until fragrant.
  • Add the chicken pieces to the pot and pour in the broth. Bring to a simmer, skimming any impurities that rise to the surface.
  • After 10-15 minutes, once the chicken is cooked through, remove it from the pot, shred it, and return it to the pot.
  • Add the egg noodles and cook for about 6 minutes until tender.
  • Remove from heat, stir in lemon juice and fresh parsley, and season with salt and pepper to taste.

Notes

To prevent noodles from becoming mushy, cook them separately and add just before serving. Store leftovers without noodles and reheat with fresh pasta. Soup can be frozen without noodles and thickens when cooled.
