  • 3 cups strawberries, hulled and roughly chopped Use frozen and thawed, or fresh strawberries.
  • 3 Tbsp honey Adjust for sweetness as needed.
  • 2 Tbsp lemon juice Brightens the flavor.

Preparation

  • Preheat oven to 140 to 170 degrees F, or as low as your oven will go. Line a sheet pan with parchment paper and set aside.
  • Add strawberries, honey, and lemon juice to a food processor or blender, and blend until smooth.
  • Taste the mixture and add more honey if needed for preferred sweetness.

Cooking

  • Pour fruit mixture onto the lined sheet pan and spread out to about ⅛ to ¼ inch thick.
  • Place the sheet pan in the oven for 4 to 6 hours until the middle is no longer tacky, checking after four hours.
  • Cool completely, then remove from the sheet pan. Trim edges and cut into 1-inch wide strips.
  • Roll each strip tightly or leave them flat for a rustic look.

Notes

Store in an airtight container layered with parchment. They stay soft and chewy at room temperature for up to 1 week. For a firmer texture, refrigerate for up to 2 weeks. For long-term storage, freeze for up to 3 months.
