Dry Ingredients

  • 2.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter (softened)
  • 1.75 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 1.5 cups puréed fresh strawberries

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, and then stir in the vanilla.
  • Alternate adding dry ingredients with the milk, starting and finishing with dry ingredients.
  • Gently fold in the puréed strawberries.
  • Divide the batter evenly between the two prepared pans.

Baking

  • Bake for 25-30 minutes, until a toothpick inserted comes out clean.

Cooling

  • Let the cakes cool in pans for about 10 minutes before transferring to wire racks.

Notes

Enjoy with ice cream, fresh fruit, or whipped cream for added decadence. Store in the fridge for up to 4-5 days or freeze for later use.
