  • 1 cup sparkling water Adjust amount based on preference.

Preparation

  • In a saucepan, combine chopped rhubarb, sugar, and water.
  • Start with a medium saucepan over medium heat, stirring gently as the mixture begins to blend.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rhubarb is soft.
  • Strain the mixture through a fine mesh sieve to remove solids, creating a rhubarb simple syrup.

Serving

  • To serve, mix 2-3 tablespoons of the syrup with 1 cup of sparkling water over ice.
  • Swirl the mixture gently to combine.
  • Garnish with mint leaves if desired.

Notes

Homemade Rhubarb Soda is best enjoyed fresh but can store the syrup in the refrigerator for up to a week. Consider freezing extra syrup in ice cube trays for later use. Adjust sweetness and try flavor variations like elderflower cordial or mixed berries.
