Homemade Raising Cane's Chicken and Cane's Sauce

Ingredients
  

Chicken Marinade

  • 2 lbs chicken tenderloins Can be replaced with chicken thighs for richer flavor.
  • 2 cups buttermilk Alternatively, use milk with lemon juice.
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp Cajun seasoning Add more for extra heat.
  • 1 tsp onion powder

Dredge for the Chicken

  • 2.5 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 tbsp baking soda
  • 1 tbsp corn starch
  • 1 tbsp salt
  • 1 tbsp garlic powder
  • 3 tsp Cajun seasoning
  • Fresh black pepper to taste

Cane's Sauce

  • 1/2 cup mayo
  • 1/4 cup ketchup
  • 1/2 tsp garlic salt
  • 1 tsp Worcestershire sauce
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp onion powder

Instructions
 

Marinate the Chicken

  • In a bowl, combine all the marinade ingredients except the chicken.
  • Place the chicken pieces into a large gallon-sized resealable bag, pour the marinade over, and seal. Let it sit in the fridge for at least 2 hours.

Prepare the Dredge

  • In another bowl, combine all the dredge ingredients and mix thoroughly.

Heat the Oil

  • In a frying pot, heat 5 cups of oil to 350°F (175°C). Use a heavy-bottom pot for steady heat.

Dredge the Chicken

  • Take one piece of chicken at a time out of the marinade, coat in the dredge mixture, and set on a wire rack. Repeat for all pieces.
  • Let the coated chicken rest for at least 10 minutes.

Fry the Chicken

  • Fry the chicken for 3-5 minutes per side or until the internal temperature reaches 165°F (75°C).
  • Remove and place on a wire rack to drain.

Make the Sauce

  • Combine all the sauce ingredients in a bowl and stir until smooth.

Serve

  • Serve the chicken warm with the sauce for dipping.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven at 375°F for best results.
