  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Preparation

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large bowl, combine the pumpkin puree, brown sugar, granulated sugar, vegetable oil, egg, and vanilla extract, and mix until well combined.
  • Step 3: In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • Step 4: Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Step 5: Fold in the chocolate chips.
  • Step 6: Drop tablespoons of dough onto a lined baking sheet, leaving space between each scoop.
  • Step 7: Bake for 10-12 minutes until the edges are golden.
  • Step 8: Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. Freezing is an option for up to three months. Reheat in the oven or air fryer for best results.
