Homemade Berry Gelatin Squares

Ingredients
  

Juices and Base

  • 4 cups fresh apple, grape, or watermelon juice (or a combination) Any juice works well, based on availability
  • 7 tablespoons grass-fed gelatin Sprinkle slowly while whisking
  • 1 teaspoon vanilla
  • 2 tablespoons honey Adjust sweetness to taste, can use up to ¼ cup

Fruits and Vegetables

  • 3 pints raspberries
  • 1 pint blueberries
  • 2 handfuls spinach (about 4 cups when pressed) Can boost nutrition without altering taste

Instructions
 

Preparation

  • Place 2 cups of juice, half the berries, and half the spinach into a blender. Blend until the mixture is smooth, about 30 seconds to 1 minute.
  • Strain the mixture through a large mesh strainer into a pot to remove the seeds.
  • Repeat the blending and straining with the remaining juice, berries, and spinach.
  • Slowly sprinkle the gelatin into the pot while continuously whisking to prevent clumps.
  • Heat the mixture over medium heat while whisking until the gelatin is completely dissolved, about 3 minutes.
  • Remove from heat and let cool for about 30 minutes.

Setting

  • Line a 15½ x 10½ baking sheet with plastic wrap and pour the mixture in until about 1 inch deep.
  • Let sit at room temperature for another 30 minutes, then refrigerate for at least 3 hours or overnight to set.

Serving

  • To serve, flip the baking sheet onto a cutting board to release the gelatin and cut into squares.
  • Store the squares in a tight-lidded container in the fridge for up to a week.

Notes

Consider serving with whipped cream or a drizzle of chocolate sauce for extra indulgence. Store them tightly sealed to avoid sogginess.
