  • 1/4 cup almond butter Can substitute with peanut butter.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract Adds flavor.

Mix-ins

  • 1/2 cup chocolate chips Choose dark or white chocolate as desired.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the rolled oats, protein powder, baking soda, and salt. Stir until well mixed.
  • In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Don’t overmix.
  • Fold in the chocolate chips.

Baking

  • Scoop tablespoons of dough onto a lined baking sheet, leaving space between them.
  • Bake for 10-12 minutes or until golden brown.
  • Let cookies cool before serving.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze in individual bags for up to three months. Crisp in the oven before enjoying.
