  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add chopped onion and garlic, sauté until softened, about 3-4 minutes.
  • Increase heat, add ground beef, and cook until browned, breaking it into pieces.
  • Stir in diced potatoes and beef broth, ensuring potatoes are spread out.
  • Season with salt and pepper, tasting gradually.
  • Bring to a boil, then reduce heat and cover.
  • Simmer for about 20-25 minutes, until potatoes are tender but not disintegrating.
  • Serve warm, garnished with parsley if desired.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat on the stovetop or microwave. Adjust seasoning when reheating if needed.
