Hearty Ground Beef and Dumplings

Ingredients
  

Beef Mixture

  • 1 lb ground beef (85% lean) Works best for flavor.
  • 1 tablespoon olive oil Only if beef is leaner.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1.5 cups beef broth
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • Salt and pepper to taste
  • 0.5 cup frozen peas or mixed vegetables (optional)

Dumpling Mixture

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 tablespoon butter, softened
  • 0.5 cup milk (whole or 2%)

Instructions
 

Browning the Beef

  • In a large skillet over medium heat, cook the ground beef until browned and no longer pink. Use a spatula to break it up as it cooks.
  • If there is excess fat, drain it.

Adding Aromatics

  • Add the diced onion and sauté until soft, about 4 minutes.
  • Stir in minced garlic and cook for 1 more minute.

Building the Sauce

  • Mix in the tomato paste and cook for another minute.
  • Sprinkle flour over the mixture and stir well to coat the beef evenly.
  • Slowly add the beef broth while stirring to avoid lumps.
  • Add thyme, paprika, salt, and pepper. Let it simmer for 8–10 minutes, stirring occasionally until the mixture thickens.
  • If using frozen vegetables, stir them in at this point.

Preparing the Dumpling Dough

  • In a medium bowl, whisk together 1 cup of flour, baking powder, and salt.
  • Add softened butter and work it into the flour until it looks like coarse crumbs.
  • Pour in the milk and gently stir until the dough comes together.

Cooking the Dumplings

  • Drop heaping tablespoons of dumpling dough on top of the beef mixture.
  • Cover the skillet with a lid and reduce the heat to low.

Simmering

  • Let the dumplings steam for about 15 minutes without lifting the lid.

Serving

  • Once the dumplings are cooked through, remove from heat and let sit uncovered for 5 minutes.
  • Serve hot, scooping a portion of beef with one or two dumplings into each bowl.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat on the stove or microwave, adding a splash of broth for juiciness.
