Healthy Strawberry Oatmeal Bars

Ingredients
  

Oatmeal Base

  • 2 cups rolled oats Gives a tender, slightly chewy texture.
  • 1 cup mashed ripe bananas (or applesauce) Adds natural sweetness and moisture.
  • 1/4 cup maple syrup (optional) Adds depth and sweetness.
  • 1/2 teaspoon baking powder Helps with rise.
  • 1/4 teaspoon salt Enhances flavors.

Strawberry Filling

  • 1 cup fresh or frozen strawberries, diced Fresh strawberries should be firm and ripe.
  • 1/2 teaspoon vanilla extract Adds a lovely fragrance.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a bowl, mix rolled oats, mashed bananas (or applesauce), maple syrup, baking powder, and salt until well combined.
  • Spread half of the oatmeal mixture in the bottom of the prepared pan, pressing it down evenly.
  • In another bowl, mix the strawberries with vanilla extract and layer them over the oatmeal base.
  • Spread the remaining oatmeal mixture over the strawberries and gently press.

Baking

  • Bake for 25-30 minutes or until the top is golden.
  • Allow to cool before cutting into bars and serving.

Notes

For a chewier bar, use all rolled oats. For neat squares, chill for 30 minutes before cutting.
