  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon red pepper flakes (optional) Add for some heat

  • 1/2 pound angel hair pasta or zucchini noodles Zucchini noodles option for a lower-carb meal

  • Boil water and cook 1/2 pound of angel hair pasta according to the package directions. If using zucchini noodles, spiralize the zucchini and set aside.
  • In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add 4 cloves of minced garlic and, if preferred, 1/4 teaspoon of red pepper flakes. Cook for about 30 seconds.
  • Add 1 pound of peeled and deveined shrimp and cook for 2-3 minutes on each side until they turn pink.
  • Pour in 1/4 cup of dry white wine and 2 tablespoons of lemon juice. Stir and bring to a simmer. Add 1/4 cup of chopped fresh parsley, salt, and pepper.
  • Drain the pasta (or pat the zucchini noodles dry) and toss everything together in the skillet. Serve immediately.

Notes

Store leftovers in the fridge for up to 2 days. You can freeze them for up to 2 months. To reheat, place in the air fryer or oven at 350°F for about 5-10 minutes, keeping it crisp.
