Ingredients

  • 2 pounds red-skinned potatoes, scrubbed clean
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 each lemon juice and zest from 1 lemon
  • 1/4 cup packed, chopped fresh parsley half for dressing and half for garnish
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh chopped dill
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup sliced red onion
  • 1/4 cup chopped scallions

Instructions
 

Preparation of Potatoes

  • Add the red potatoes to a pot, cover them with water, and boil over medium-high heat.
  • Reduce the heat to simmer and let them cook for 5-7 more minutes until fork tender.
  • Remove and drain under cold water, reserving some of the starchy water.

Cutting and Dressing

  • Once the potatoes are cool enough to handle, slice them in half or quarter if larger.
  • In a small bowl, combine olive oil, red wine vinegar, Dijon mustard, lemon juice, lemon zest, half of the parsley, thyme, dill, salt, and pepper. Whisk well to combine.

Assembly

  • In a large bowl, add the sliced potatoes along with the sliced red onion and scallions.
  • Pour on the dressing and lightly toss it all together.
  • Top with the remaining herbs and more lemon zest, salt, and pepper for taste.

Serving

  • Enjoy the salad at room temperature as a healthy side dish.

Notes

For additional flavor, consider adding a dash of fresh herbs or more lemon zest before serving. Store in an airtight container in the fridge for up to 3-5 days.
