Healthy Plum Oatmeal Muffins

Ingredients
  

  • 1 cup diced fresh plums about 2 medium plums
  • 1 cup rolled oats not instant
  • 1 cup whole wheat flour or all-purpose
  • cup honey or maple syrup
  • ½ cup Greek yogurt or applesauce for vegan option
  • 1 egg or flax egg for vegan option
  • 1 teaspoon cinnamon optional
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  • In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk together honey (or maple syrup), Greek yogurt, and egg until smooth.
  • Pour the wet mixture into the dry ingredients and fold gently to combine. Do not overmix.
  • Fold in the diced plums last.
  • Divide batter evenly among muffin cups. Bake for 18–20 minutes, until tops are golden and a toothpick inserted in the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 2 days, in the fridge for up to 5 days, or freeze for 3 months. To reheat, microwave for 10 seconds or warm in the oven. For vegan muffins, substitute egg with a flax egg, use maple syrup, and plant-based yogurt. For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats.
