Healthy Homemade Jello

  • 4 cups juice (any flavor you love or have on hand) Can use apple, grape, or tropical juices.
  • 2 tablespoons unflavored beef gelatin Ensure it bloats properly.
  • 2 tablespoons honey (or agave, or cane sugar - optional) Sweetener optional based on preference.

Preparation

  • Pour 1/2 cup of juice into a liquid measuring cup or small bowl. Sprinkle gelatin powder over the juice and stir to combine. Set aside for about 5 minutes to bloom.
  • In a medium saucepan, heat the remaining 3 1/2 cups of juice over medium-high heat until steaming.
  • Add honey or sweetener if using, and the bloomed gelatin to the hot juice. Stir until completely dissolved and smooth.
  • Pour the mixture into a 2-quart ceramic pan or heat-proof containers and cover with plastic wrap. Chill for at least 3-4 hours until set.

Serving

  • Once set, slice into squares or scoop into bowls and enjoy immediately, or store in the refrigerator for later.

Notes

Store in an airtight container to maintain freshness. Jello can last for about a week in the refrigerator.
