Ingredients
  

For the Cookie Dough Base

  • 1.5 cups almond flour Forms the base and gives a nutty flavor.
  • 0.25 cups cashew butter or peanut butter Creates a creamy and rich texture.
  • 0.25 cups maple syrup Adds sweetness and a touch of caramel flavor.
  • 2 tbsp melted coconut oil Helps bind the ingredients together.
  • 1 tsp vanilla extract Adds sweetness and aroma.
  • 0.25 tsp salt Balances sweetness and enhances flavor.
  • 0.25 cups chocolate chips Creates delicious pockets of chocolate.

For the Chocolate Topping

  • 1 cup chocolate chips Extra indulgence on top of the bark.
  • 1 tsp coconut oil For melting the chocolate.
  • flaky sea salt Optional for topping.

Instructions
 

Mix the Base

  • In a large bowl, add almond flour, cashew butter (or peanut butter), maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined.

Add Chocolate Chips

  • Fold in 1/4 cup of chocolate chips to create delicious pockets of chocolate.

Prepare the Bark Base

  • Line a cutting board or large plate with parchment paper. Transfer the cookie dough mixture onto the parchment paper and press down to flatten into a 1/2-inch thick layer.

Melt the Chocolate

  • In a small bowl, combine chocolate chips with coconut oil. Microwave for about 30 seconds at a time, stirring between intervals until fully melted.

Spread the Chocolate

  • Pour the melted chocolate over the pressed cookie dough and use a spatula to spread it evenly.

Add Flaky Sea Salt

  • Sprinkle flaky sea salt on top, if desired.

Chill and Set

  • Place the dish in the freezer for about 10 minutes to set.

Cut and Enjoy

  • Once set, remove from the freezer and chop into large chunks.

Notes

Storage tips: In the fridge for up to one week, in the freezer for about three months.
