Main Ingredients

  • 1 cup chickpeas, cooked and drained Can use canned chickpeas, just rinse and drain well.
  • 1/2 cup peanut butter or almond butter Substitute with sunflower seed butter for nut-free.
  • 1/4 cup honey or maple syrup Use agave nectar for a vegan version.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, combine the cooked chickpeas, peanut butter or almond butter, honey or maple syrup, vanilla extract, baking soda, and salt. Blend until the mixture is smooth and creamy.
  • Fold in the chocolate chips gently.

Baking

  • Drop spoonfuls of the cookie dough onto the lined baking sheet, leaving space between each dollop.
  • Bake for 10-12 minutes until the edges are golden brown and the centers remain soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat in the oven or air fryer for a few minutes to enjoy their chewiness again.
