Ingredients
  

Chicken Mixture

  • 3.5 cups cooked chicken Shredded or cubed
  • 0.5-0.75 cups Caesar salad dressing Adjust to taste
  • 0.25 cups grated parmesan cheese For topping
  • 0.25 cups radicchio, shredded For added crunch and color
  • 1 tbsp fresh lemon juice Squeezed from half a lemon
  • 0.25 cups crushed gluten-free croutons or cheese crisps For added texture

Lettuce Wraps

  • 8 leaves butter lettuce or romaine lettuce cups Use two leaves for each wrap

Instructions
 

Preparation

  • In a large bowl, mix together the cooked chicken, Caesar dressing, grated parmesan, radicchio, lemon juice, and crushed croutons. Start with half a cup of dressing and add more as needed.
  • Layer two leaves of lettuce on top of one another.
  • Scoop the chicken mixture onto the lettuce cups, filling them generously.
  • Serve immediately while everything is fresh.
  • Optional: Garnish with a sprinkle of additional parmesan.

Notes

For storage, keep the chicken mixture and lettuce separate to avoid sogginess. The chicken mixture can be stored in an airtight container in the fridge for up to 3 days. When reheating, the oven at 350°F for 10 minutes preserves the crunch.
