Ingredients
  

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup onion, chopped
  • 4 cloves roasted garlic Roast at 400°F (200°C) for about 30 minutes
  • 2 teaspoons olive oil For sautéing
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Optional Toppings

  • Pumpkin seeds For added crunch
  • Cream For richness
  • Fresh herbs Such as parsley or cilantro for garnish

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the roasted garlic, butternut squash, and vegetable broth along with the cumin, ginger, and cinnamon.
  • Bring everything to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the squash is tender.

Blending and Serving

  • Use an immersion blender or transfer your mixture to a blender to puree the soup until smooth.
  • Season with salt and pepper to taste.
  • Serve warm, topped with pumpkin seeds, cream, or fresh herbs.

Notes

If you have leftovers, store them in an airtight container in the fridge for 3-4 days. The soup can also be frozen for up to three months.
