Ingredients

  • 6 cups fresh apricots halved and pitted
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch or arrowroot powder

  • 1 teaspoon cinnamon
  • pinch salt

  • Preheat oven to 375°F (190°C).

  • Bake for 30–35 minutes until topping is golden and fruit is bubbling.
  • Cool for 10 minutes before serving.

Notes

Store in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven for best texture. Swap apricots for peaches or plums, almond flour for oat or regular flour, and honey for maple syrup if needed.
