  • 1 Tbsp. gelatin Unflavored gelatin recommended.
  • to taste Honey (optional) Adjust sweetness as desired.

Preparation

  • Prepare your fruit puree or juice by blending fresh fruits until smooth. If using berries, strain out the seeds for a smoother texture.
  • In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it bloom for about 5 minutes.
  • In a saucepan, heat the fruit puree or juice until warm but not boiling.
  • Remove from heat and stir in the bloomed gelatin until completely dissolved.
  • Sweeten with honey to taste, starting with a small amount.
  • Pour the mixture into molds or cups and refrigerate until set, usually about 4 hours.

Serving

  • Serve in individual cups or a big mold for family-style dessert.
  • Consider pairing with whipped cream or Greek yogurt for added creaminess.
  • Top with fresh fruit for visual appeal.

Notes

Store leftovers in an airtight container in the fridge for up to a week. Can be frozen, but texture may change upon thawing.
