Ingredients
  

For the Marinade

  • 1 cup soy sauce
  • 1 cup pineapple juice Or add pineapple chunks with juice
  • 1 cup brown sugar Packed
  • 5 cloves mashed garlic
  • 1 tablespoon fresh ginger, minced

For the Chicken

  • 3 pounds chicken thighs Bone-in thighs can also be used

For Serving

  • fresh pineapple chunks Optional garnish
  • cilantro Optional garnish

Preparation

  • In a large bowl, combine soy sauce, pineapple juice, brown sugar, mashed garlic, and minced ginger to make the marinade. Stir until glossy and fragrant.
  • Add the chicken thighs to the marinade. Make sure they are well-coated. Marinate for at least 30 minutes or even overnight if possible.

Cooking

  • Preheat the grill or oven to medium heat.
  • Remove the chicken from the marinade. Grill or bake until cooked through, about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Serving

  • Serve hot, garnished with fresh pineapple chunks and cilantro.

Notes

Leftovers can be stored in an airtight container in the refrigerator. Reheat on the stovetop over low heat, adding a splash of water if needed to keep it juicy.
