Main Ingredients

  • 2 cups leftover ham, diced
  • 1 can white beans, drained and rinsed (15 oz)
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups chicken broth Use great-quality broth for a depth of flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a slow cooker, combine the diced ham, white beans, kidney beans, onion, carrots, celery, chicken broth, minced garlic, thyme, salt, and pepper.
  • Stir everything together until well mixed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Taste and adjust seasoning as needed.
  • Serve hot, and enjoy with family.

Notes

For serving, accompany with crusty bread and sprinkle fresh parsley on top. This soup also freezes well and tastes even better the next day.
