  • 1 lb ground turkey Can substitute with ground chicken or lean beef.
  • 2 medium zucchinis, diced Fresh zucchini preferred for texture.
  • 1 medium bell pepper, chopped Any color bell pepper can be used.
  • 1 small onion, chopped Chop into similar sizes as other vegetables.
  • 2 cloves garlic, minced Stir often to avoid burning.
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika Can add a pinch of cinnamon for warmth if desired.
  • to taste Salt and pepper Adjust according to preference.
  • 2 tbsp olive oil Use fresh butter at the end for a richer flavor.
  • 1/4 cup grated Parmesan cheese (optional) Freshly grated is preferred for a smoother melt.
  • to taste Fresh parsley, chopped For garnish.

Preparation

  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add chopped onion and minced garlic, and sauté until onion is translucent.
  • Add ground turkey, cooking until browned and fully cooked. Break into small pieces.
  • Stir in diced zucchini, chopped bell pepper, Italian seasoning, and paprika.
  • Cook until zucchini is tender, seasoning with salt and pepper to taste.
  • Remove from heat and stir in Parmesan cheese if using.
  • Garnish with fresh parsley before serving.

Notes

For meal prep, the dish keeps well in the fridge for up to four days. Can be frozen for up to three months. Thaw overnight in the fridge and reheat gently.
