Main Ingredients

  • 2 slices sourdough bread, sliced 1.3–1.5cm thick Feel free to substitute with your favorite bread.
  • 30 g SALTED butter Slather on for a crispy crust.
  • 1/3 cup vintage cheddar cheese, freshly grated Can substitute with other cheese varieties.
  • 30 g mozzarella, freshly grated A classic choice for melting.

Instructions
 

Preparation

  • Slather both sides of each piece of bread with the butter.
  • Heat a heavy-based skillet over medium-low heat.
  • Place both pieces of bread in the skillet and lightly toast for about 1 minute.
  • Flip one slice of bread, and pile on the cheddar cheese followed by the mozzarella.
  • Top it off with the other slice of bread.

Cooking

  • Cook for 3 minutes, pressing down lightly with a spatula.
  • Turn the sandwich over and cook the other side for another 3 minutes.

Serving

  • Transfer to a cutting board, cut in half, and enjoy.

Notes

Best served warm. Can be served with tomato soup or avocado salsa for dipping. Leftovers should be stored in an airtight container and reheated in the oven for best results.
