Ingredients

  • 8 oz dry macaroni noodles
  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • cup thinly sliced celery
  • cup finely diced red onion
  • 2 large hard-boiled eggs, finely diced

Dressing

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons sweet pickle juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sugar
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon garlic powder
  • teaspoon crushed red pepper

Instructions
 

Cooking the Macaroni

  • Boil salted water in a large pot. Add dry macaroni noodles and cook until they are al dente, about 8-10 minutes. Drain and rinse under cold water, then toss with a splash of olive oil.

Mixing the Ingredients

  • In a large bowl, combine the cooked macaroni with diced gherkins, red bell pepper, celery, red onion, and hard-boiled eggs. Mix well.

Preparing the Dressing

  • In a separate bowl, whisk together mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper. Pour over the salad mixture and toss gently.
  • Cover the bowl and refrigerate for at least 1 hour before serving. Stir again and adjust seasoning if needed.

Notes

Store leftovers in the fridge in an airtight container for up to 3 days. Can be frozen for up to a month. Revive in the air fryer or oven to prevent sogginess. Consider using pre-chopped vegetables or rotisserie chicken for convenience.
