Main Ingredients

  • 1 pound ground beef Can swap for ground turkey or plant-based alternatives.
  • 1 medium onion, diced Diced ahead of time can save prep time.
  • 2 cloves garlic, minced Minced to enhance flavor.
  • 1 can black beans, drained and rinsed You can use any beans you prefer.
  • 1 can kidney beans, drained and rinsed Add corn for sweetness if desired.
  • 1 cup diced tomatoes Fire-roasted for a smoky flavor is a great option.
  • 2 tablespoons gochujang Adjust to suit your spice preference.
  • 1 tablespoon soy sauce Optional for additional flavor.
  • 1 tablespoon cumin Adds depth to the chili.
  • to taste Salt and pepper Season according to your taste.

  • to taste cilantro Adds freshness to the chili.

Instructions
 

Sauté the Onions and Garlic

  • In a large pot, heat a bit of oil over medium heat. Add the diced onion and sauté until they become translucent, about 4-5 minutes.
  • Add the minced garlic and cook for an additional minute.

Brown the Ground Beef

  • Add the ground beef to the pot. Cook until the beef is browned, breaking it apart with a spoon, about 5-7 minutes.

Combine and Simmer

  • Stir in the gochujang, soy sauce, and cumin. Mix well to coat the beef.
  • Add the diced tomatoes and both cans of beans, season with salt and pepper to taste.
  • Reduce the heat and let the chili simmer for at least 30 minutes, stirring occasionally.

Notes

Leftover chili stores well in the refrigerator for up to 4 days. It can also be frozen for up to three months. To reheat, warm over medium heat, adding water or broth if it thickens.
