Ingredients
  

Dry Ingredients

  • 2 cups Almond flour Use blanched and superfine for best texture
  • 1 cup Granulated sugar Regular or coconut sugar can work for a twist
  • 1 pinch Baking powder
  • 1 teaspoon Salt Brings out the sweetness

Wet Ingredients

  • 1/2 cup Softened unsalted butter The real deal, not margarine
  • 1 large Egg Room temperature is best
  • 1 teaspoon Vanilla extract For extra cozy flavor
  • 1 teaspoon Almond extract Optional, for added flavor

Optional Add-ins

  • 1/2 cup Colored sprinkles If you're feeling fun

Instructions
 

Preparation

  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract if using.
  • Sift in the almond flour, baking powder, and salt. Mix gently until the dough starts to come together.
  • Scoop out the dough, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C).
  • Roll out the chilled dough between two pieces of parchment paper and cut into desired shapes.
  • Place the cookie shapes on a lined baking sheet and bake for 10-12 minutes, until lightly golden in the center.
  • Allow cookies to cool before decorating or serving.

Notes

For best results, avoid over-baking to keep cookies soft. These cookies freeze beautifully. Store baked cookies in an airtight container for about 3-4 days.
