  • 1 cup gluten-free flour Ensure it's certified gluten-free.
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar Packed brown sugar is recommended.
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg

  • 1 cup chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream together the softened butter, sugar, and brown sugar until smooth.
  • Beat in the large egg and the vanilla extract until combined.
  • Gradually add the dry mixture to the wet ingredients and mix gently until no flour pockets remain.
  • Fold in the chocolate chips.

Baking

  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are set and the middle looks soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in the fridge for up to a week or freeze for up to three months. To reheat, place them in an oven at 350°F (175°C) for about 3-5 minutes.
