  • 1 cup gluten-free flour blend Ensure it's a good quality blend for best results.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup unsalted butter, softened Softened for easier mixing.
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 1/2 cup chocolate chips Use semi-sweet or dark chips based on preference.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the gluten-free flour, baking soda, and salt. Stir them together until well mixed.
  • In a large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
  • Beat in the large egg and vanilla extract into the butter mixture until combined and smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the chocolate chips until evenly distributed.
  • Drop balls of dough onto a lined baking sheet, leaving space between each ball.

Baking

  • Bake in the preheated oven for about 10-12 minutes, or until golden brown around the edges.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in the fridge for up to a week or freeze for up to three months. Reheat at 350°F (175°C) for 5-7 minutes, or use an air fryer.
