  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the gluten free flour, baking soda, and salt.
  • In another bowl, cream the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the vanilla extract and egg into the sugar mixture.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the chocolate chips gently.

Baking

  • Using a spoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate for up to two weeks or freeze for up to three months. Reheat in the oven at 350°F for about 5 minutes.
